Things You Need:

  • 1 cup nonfat milk
  • 1 Tbsp. pumpkin puree
  • ¼ tsp. pumpkin pie spice
  • 2 tsp. pure vanilla extract
  • 1 cup brewed black coffee or 1 shot espresso
  • 1 dash ground nutmeg (to taste; optional)

How to do it 🙂

  1. 1. Heat milk, pumpkin puree, pumpkin pie spice, and extract in medium saucepan over medium heat; cook for 4 to 5 minutes, or until mixture is hot, but not boiling. It is ready when there are many small bubbles on the sides of the saucepan.
  2. 2. Remove from heat; mix vigorously with a whisk until frothy.
  3. 3. Pour coffee or espresso into serving mug; top with milk mixture.
  4. 4. Top with nutmeg if desired.

This one is especially good during the holidays when cinnamon just calls to you from the cabinet-yelling "bake with me". Now, you can just pour some of this in your coffee and quiet that baking cabinet

  • 1/4 cup + 2 tbsp date paste
  • 3/4 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp almond extract

Ok, everyone who knows me KNOWS that I am a coffee addict. So, coffee creamers have to come in a close second.

 

Ingredients

  • 1 cup unsweetened cashew milk
  • 1 1/2 tbsp unsweetened cocoa powder
  • 1/2 tsp almond extract
  • 1/4 cup + 2 tbsp date paste

Instructions

  1. Combine all in blender.
  2. Blend.
  3. Enjoy.

1 cup cashew milk
1/4 cup + 2 tbsp date paste
2 tsp hazelnut extract
1/2 tsp vanilla

Combine all in the blender, blend and enjoy!

vanilla coffee creamerI used to be addicted to French Vanilla Coffee Creamer. It reached the point that I couldn’t have coffee away from home unless is was creamy and vanilla flavored. Only have half and half? No-thank you. It needed to be vanilla coffee creamer.

When I started eating healthy, coffee creamer was one thing that I eventually cut out of my “diet”. I realized that there was nothing in it that was remotely healthy-especially if I can’t pronounce any of the ingredients. I learned to drink my coffee black. I really do enjoy it that way. However, every once in a while I get this feeling that I just need some creamy yummy coffee.

I realized that I could make my own with healthier ingredients and they are really good. Problem solved.

Ingredients

1 cup cashew milk
1/4 cup + 2 tbsp date paste
1 tbsp vanilla

Instructions

Blend all together in blender and store in a glass jar in the fridge. Enjoy. It really is that simple.

I discovered iced coffees a few years ago. I became addicted obsessed, according to dictionary.com to the McDonald’s iced coffees. Now I can have them whenever I want – without the looks from the person behind the counter because I have been there every day.

Things You Need:

  • Brewed pot of McDonald's coffee (or any coffee you like)
  • *** I make mine strong so that it isn't diluted when I make the iced coffee***
  • 1/2 cup Skim milk unsweetened almond milk, unsweetened cashew milk
  • truvia packet or sugar free coffee syrup if desired

How to do it 🙂

  1. Make pot of coffee to be stored in a glass jar in the fridge.
  2. Pour desired amount of cold coffee over ice and add 1/2 cup desired milk and sweetener.
  3. I freeze almond/cashew milk ice cubes so that my coffee gets creamier as the ice "melts" instead of it getting watered down.

**If unsweetened almond milk is used, like I do - these are less than 25 calories per iced coffee** TIP: Freeze almond milk ice cubes to use instead of regular ice. Then, it doesn't get watered down at all.
