White Chicken Pumpkin Chili

White Chicken Pumpkin Chili

I know most people love chili in the fall and winter. However, for me.....it is comfort food year-round. I was playing around with a recipe this morning and came up with this. The canned pumpkin adds extra fiber to this recipe. I will be having this for my lunches throughout the week.

Ingredients

  • 1 green bell pepper chopped
  • 1 chopped onion
  • 2 cloves garlic
  • 2 cups diced/shredded cooked chicken breast
  • 1 small can diced green chilies
  • 2 roma tomatoes diced
  • 15 oz can pumpkin puree
  • 1 1/2 cups white beans
  • 1 tbsp cumin or more to taste
  • 2 tbsp chili powder or more to taste

Instructions

  1. Saute green pepper and onion until translucent.
  2. Add garlic, cook for one minute longer.
  3. Add the chicken. (I used frozen chicken that I had made in the crockpot that I discussed here).
  4. Next add pumpkin, diced tomatoes, diced green chilis, and white beans.
  5. Next, add the spices. Adjust these to your family's taste. Our family likes a lot of chili powder and cumin flavor. You might choose to add salt as well. I choose not to add salt out of personal preference.
  6. Simmer for at least 20 minutes. I prefer to put this in the crock-pot and let it do all the cooking for me. However, in a pinch do this on the stove and you can be eating a delicious and nutritious chili by lunchtime.
  7. To serve try topping each serving  with fresh cilantro,  plain greek yogurt, and extra diced tomatoes. This could be served over quinoa or brown rice as well.

  1. This is my mom's recipe. I love crock pot meals on busy days because I know that dinner is there for me when I get home.

    Ingredients

    • 1 package 6 oz long grain and wild rice mix OR 6 oz wild rice mixed with long grain rice
    • 6 boneless chicken breasts
    • 1 tbsp olive oil
    • 1/2 lb sliced mushrooms
    • **1 can campbell's healthy request can cream of chicken soup (see note below for substitute)**
    • 1 cup water
    • 1 tsp dried parsley
    • 1/2 tsp dried thyme
    • 1/4 tsp dried tarragon

    Instructions

    1. Place rice in slow cooker; set aside seasoning packet. Place chicken breasts on top of rice. Place mushrooms over chicken. In a small bowl, combine the soup, water, herbs and contents of seasoning packet. Pour over top. Cover and cook on low for 4 hours or until chicken juices run clear.

    Recipe Notes

    **Insteas of a can of cream soup: you can substitute 4 ounces light cream cheese and 1 cup milk of choice. Add this in the last 30-60 minutes of cooking.

I knew today was going to be a really busy day. When I know I'm going to have such a busy day I like to know that I have dinner ready for me and I don't need to worry about it. When I walked in the house this afternoon, it smelled amazing!

Ingredients

  • ~1 lb dried lentils-rinsed
  • ~1-16 oz frozen bag zucchini or 2-3 fresh
  • ~1-16 oz frozen bag green beans
  • ~4 carrots sliced
  • ~2- 15 oz cans crushed tomatoes
  • ~8 cups water
  • ~Seasonings to taste: I used italian seasoning onion powder, and garlic powder

Instructions

  1. Combine all in crockpot. Turn on high. I cooked it on high for about 6 hours. You could probably turn it on low for 8 hours or longer.

This is yummy as tacos or thrown on absolutely anything! Burritos, burrito bowls, taco salad, etc. Favorite in this house because it can be made super fast in the morning and ready for you at dinner.

Ingredients

  • 3 lbs chicken breast
  • 1 packet low sodium taco seasoning
  • 2 cans diced tomatoes

Instructions

  1. Just mix tomatoes and taco seasoning together. Pour over chicken breast and cook for 8 hours on low, or 4-ish hours on high.

As a busy mom, I love my crockpot. I can put dinner in it in the morning and know that I don't even need to have the dreaded "what am I doing for dinner?" question hanging over my head around 4 in the afternoon. Chicken is always a go-to for us and this recipe has a definite comfort feel to it. Feel free to spice it up any way you like.

Ingredients

  • 6 medium potatoes cut
  • 1 onion diced
  • 3-5 carrots diced
  • ¼ tsp black pepper
  • 5 lbs of chicken
  • 2 tsp cloves of garlic
  • 1 tbsp oregano
  • 1 tsp rosemary
  • ½ cup lemon juice

Instructions

  1. Place potatoes, onion, and carrots in bottom of crock pot. Place chicken on top of vegetables. Mix herbs and lemon juice. Pour over chicken. Cook on low 6-8 hours until juices run clear.
