- This is my mom's recipe. I love crock pot meals on busy days because I know that dinner is there for me when I get home.
- 1 package 6 oz long grain and wild rice mix OR 6 oz wild rice mixed with long grain rice
- 6 boneless chicken breasts
- 1 tbsp olive oil
- 1/2 lb sliced mushrooms
- **1 can campbell's healthy request can cream of chicken soup (see note below for substitute)**
- 1 cup water
- 1 tsp dried parsley
- 1/2 tsp dried thyme
- 1/4 tsp dried tarragon
Place rice in slow cooker; set aside seasoning packet. Place chicken breasts on top of rice. Place mushrooms over chicken. In a small bowl, combine the soup, water, herbs and contents of seasoning packet. Pour over top. Cover and cook on low for 4 hours or until chicken juices run clear.
**Insteas of a can of cream soup: you can substitute 4 ounces light cream cheese and 1 cup milk of choice. Add this in the last 30-60 minutes of cooking.
